This is a great way to use up leftover bananas. These cupcakes are American style and use creme fraiche which gives them an extra moist and squishy texture.

Ingredients
- 110g butter or margarine
- 150g white sugar
- 1 egg
- 1 egg yold
- 2 tsp vanilla essence
- 175g flour
- 2 teaspoon baking powder
- pinch of salt
- 2 ripe bananas
- 100g dark chocolate chips
Directions
- Pre-heat oven to 180C
- Mix all the ingredients except the chocolate chips together to form a dough.
- Add in the chocolate chips and mix.
- Fill a cupcake tray with cupcake forms and fill each form two thirds full with the cupcake batter.
- Bake for 20 minutes or until the cupcakes are risen and lightly golden.
